This photograph of my mother was taken in January 1957 by my father, Stellgis Nichols. Mama is on the Acropolis in Athens, Greece standing in front of the Parthenon. They were on their honeymoon.
“My grandparents, Paul and Antigone Rousakis were Greek immigrants who came to America in the early 1900’s through Ellis Island. They settled in Savannah, Georgia and had four children. One of them was my mother, Maria. Growing up I remember many happy gatherings of family and friends, usually around the dinner table. Like many Europeans, the native Greeks love life, celebrating every minute of every day. A big part of that is good wine and good food!
When we re-opened the old Crystal Beer Parlor in 2009, I was sure to include my Mama’s Greek Salad as a tribute to my mother and all those who came before me. It’s been one of our most popular offerings.
This recipe for Greek salad dressing is generations old and I’m delighted to share it with you. I hope you’ll enjoy it as much as my family and our guests at the Crystal Beer Parlor have over the years.”
